Lemon syrup cake

This is a cake I have made many many times, so much so that I got completely sick of it. But every now and then I will look in the fridge and find some plain yoghurt, which is a hint from my partner that he wants me to make this cake again. So I got the hint and here it is.



125g Butter
1cup Caster sugar
3 Eggs
Zest of 2 medium lemons
3/4cup Unsweetened plain yoghurt
1 1/2cups Self raising flour (If you don't have self raising then just add 1t of Baking Powder to every 1cup of flour)


3/4cup Sugar
1/3cup Water
Juice of 2 medium lemons

Beat butter and sugar until Pale
Add the eggs one at a time until combined, don't worry if it looks a little curdled
Fold in the zest, flour and yoghurt
Pour into a greased cake tin(try to pour more to the sides than the middle) and bake for 30-40mins at 180degrees celsius
When the cake is almost cooked put water, sugar and lemon juice on the heat until dissolved stirring constantly
Don't worry if the cake looks like its burning as it does have a brown top when it is cooked
When the cake is cooked take it out of the oven and prick about 30holes in the top with a fork, skewer, chopstick whatever you have, then pour the syrup over the top trying to get most of it in the center and in the holes.
Leave to cool and enjoy

It's not the prettiest looking cake but it sure tastes good
