Delish muesli bars

We have a insane amount of rolled oats in our pantry which we hardly ever use, so I thought I would make some muesli bars.

Recipe adapted from this Choc chip oat slice





Melted butter, egg and a dash of vanilla essence added to the mix

Extra pistachios, cashews and seeds sprinkled on top with a drizzle of golden syrup before popping into the oven

Recipe:

1 cup of flour
1/2 teaspoon of baking powder
1 cup of rolled oats
1/4 cup of desiccated coconut
2/3 cup brown sugar
2/3 cup of sultanas
1/2 cup chocolate buttons
1/4 cup pistachios 
1/4 cup cashews
1/4 cup assorted seeds
5-6 prunes 
Dash of vanilla essence
1 egg, lightly whisked
125 grams of melted butter, cooled

-Preheat oven to 180Âșc,  brush slice tin with butter and line with baking paper.

-Sift the flour and baking powder into a bowl. Add the oats, coconut, brown sugar, pistachios, cashews, sultanas, seeds, chocolate buttons and prunes, stir to combine. Make a well in the center of the bowl, add the egg, vanilla essence and butter. Stir until well combined.

-Spoon mixture into the slice tin and flatten. Sprinkle with cashews, pistachios and seeds. Drizzle with golden syrup( you could also use honey)

-Bake for approximately 20 minutes or until golden brown

-Cut into slices

Enjoy these as a healthy treat throughout the day with a cup of tea.
